About the Sweet Potato
The Sweet Potato is known as "Nature's Most Nutritious Vegetable". It is virtually fat free, cholesterol free, very low in sodium, and provides nearly half of the USRDA daily requirement of Vitamin C and four times the daily allowance of beta-carotene. Sweet Potatoes are loaded with antioxidants (beta-carotene and vitamins A, C and E), which in many studies, have helped prevent heart disease and cancer, bolster the immune system, and promote good vision and healthy skin. They also contain many other essential nutrients including potassium, iron and vitamin V-6.
